Keto, Diabetic Friendly Dessert: Pumpkin Mousse

So yesterday came and went, and I wasn't feeling too hot.  I'm here today, though! And I have an amazing recipe that will be a hit at any family get together.  This recipe makes A LOT of mousse, but no worries! There won't be any left over by the end of the night ;) (Sorry for the not so pretty photo!) Pumpkin Mousse (Low Carb, No Sugar Added, Diabetic & Keto Friendly!) 8 oz. Neufchatel Cheese, softened 8 oz. Marscapone Cheese 1 1/2 c. canned pumpkin (NOT canned pumkin pie) 2/3 c. liquid Splenda (If you have the little squirt bottle, it's about 32 squirts!) 2 c. My Favorite! Orange Cranberry Chutney Recipe!

Y'all.... the Holiday Seasons is official among us! We've made it through Thanksgiving, and Black Friday. We're well on our way into the Christmas/Hannukah season now! Sometimes it's fun to shake things up.... but coming up with your own recipe can be a headache! So shake things up this holiday season and try my amazing Orange Cranberry Chutney! Ingredients you'll need: 1- 12oz. bag of fresh cranberries 1 orange (you'll need about 1/2 tsp of the zest) 1 tbsp. orange juice (you can use the orange from the zest, or bottled) 1 c. granulated sugar 1/2 tsp. ground cinnamon A dash of ground clove 1/4 c. cold water What to do: In a pot over medium heat add water and cranberries. Keep an eye on your cranberries, and stir them frequently! After a little while they will start to pop! When You Want Some Easy Comfort Food...

Imagine, it's Sunday morning. Last week was rough, and you could use a simple dinner idea that everyone will love. Queue Chile Verde. It's simple, and delicious. And my recipe isn't necessarily the traditional way to make it, but amazing nonetheless! Here's what you'll need: 2 lb. pork loin roast, cut into 1 1/2 inch cubes 1 - 16oz. jar salsa verde (we used Pace, but you can use any brand you trust!) 1 - 7oz. can diced green chiles (we used store brand for this one) 3 lg. red potatoes, cut into 1 inch cubes (Russets also work well with this meal, so use what you have or looks good at the store this week!) 1 tbsp. minced garlic (if you want to mince it yourself, it's about 3 cloves fresh garlic) 1/4 tsp. ground cumin 1 tsp. dried oregano 1/2 tsp. garlic powder Salt & Pepper, to taste Steps! Y'all. I did something a little crazy. Well, crazy for * me * anyway. I signed up for a virtual 5K. I've never done a 5K in my life! I've barely prepped! I mean, I actually have to get up and move for this thing ! I can't just sit in my car and drive around the park..... like I kind of want to! No, no! I need to get ready! Water bottle? I have one! That stuff just runs right off me! I use a higher SPF facial moisturizer, wear a hat, and sunglasses. I rarely burn on my face because of this. My arms, however. They are beacons of lobsteresque hope killers. I can apply 18 layers of the store's strongest sunscreen, and that sh*t will melt right off me in less than an hour! And it's not like a sweat a lot, tbh I probably don't sweat enough! My skin just repels it, and I've never understood...
